This tasty treat is our take on a classic summer spread. This picnic pesto can be used on sandwiches, pasta dishes or as a marinade on grilled chicken breast.
Our delightfully Smoked Parmesan is the star of this pesto. We chose to add parsley to balance the flavor palate, raw unskinned almonds were selected in place of pine nuts (mainly for their accessibility and affordability). The result is a fabulous rustic pesto that will delight all your picnic guests this summer.
1 cup fresh basil
1 cup fresh parsley
1 cup raw almonds
1 cup hand shredded Smoked Parmesan, or more to taste
4 cloves of garlic, more or less to taste
1/4-1/2 cup extra-virgin olive oil
First blend garlic, almond, parsley and basil in a food processor until fully mixed and to desired consistency. Transfer to a bowl and begin adding Smoked Parmesan and ¼ c extra virgin olive oil. Hand blend with spatula adding additional Smoked Parmesan and/or garlic to taste. Add olive oil to create desired consistency.
